This is a recipe I got out of the ads in the Sunday paper. It's obvious that it is sponsored by TOSTITOS (R)! Girlfriend-Friendly Dip- Ingredients:
- TOSTITOS(R) SCOOPS(R) Tortilla Chips
- TOSTITOS(R) brand All Natural Salsa
- TOSTITOS(R) Creamy Salsa
- 2 cans fat-free refried beans
- 1 8oz. package of reduced fat cream cheese
- Light sour cream
- 1 bag light or low-fat Mexican shredded cheese
- Southwest Seasoning
- 1 Garlic clove, pressed
Directions: Spread the refried beans in the bottom of a 12" round oven-safe baking dish. In a separate bowl, mix the sour cream, garlic, southwest seasoning, and cream cheese. Top with shredded cheese and bake in the oven until the cheese is melted. Remove from the oven and top with a jar of TOSTITOS(R) All Natural Salsa and a dollop of TOSTITOS(R) Creamy Salsa and TOSTITOS(R) SCOOPS(R) Chips. *********************** I think they want you to add the cheese after it's mixed back onto the beans. Sounds good to me though! |

Ingredients: 4 moderately sliced pork chops 1 peach (or as much as 1 1/2 peaches) 2 Tablespoons of honey 1 Tablespoon Olive Oil 1 Tablespoon lemon juice 1 Tablespoon Simply Organic brand All Purpose seasoning Put the oven on Broil (or 500 degrees) In a glass oven safe dish, lay the pork chops out flat. First, I drizzled 1 T of the honey. Then I cup up one peach into little pieces over the chops. Then I sprinkled over the chops in this order: lemon juice, olive oil, All purpose seasoning, and then the rest of the honey. Broil on each side for about 7 minutes (give or take depending on thickness of pork and your oven) until done. Eat! :)

Gotta write this down so I remember what I did. Started with 1/2 a canning jar of pre-cooked mixed soup beans with celery and onion. Added olive oil and a small carton of tomato soup. Then added a can of Wegmans Veggie Tomato Sauce. Simmered. Added Vegetable stock, and some shiraz. Also sampled some Shiraz. :D Added one large can of mushroom pieces, small can of peas, 2 cans of tiny shrimp. Added one package of turkey kielbasa. Also added poultry seasoning and cajun seasoning. And 2 bay leaves. Simmered for 1 hours. Came back and added a can of zucchini with tomatoes, and one can of potatoes. Then I made one cup of uncooked rice. (Serves 4 in the rice department.) I used 1 cup veggie stock and 3/4 cup water to make the rice. Added some butter after it was boiling. Served in bowl with rice on bottom, other on top. Could definitely use more kielbasa, and maybe add chicken. |

So this is supposed to be a journal for recipes and general things about foods, so here I am, thinking about food. I really like collecting things with fruit on them. I have earrings with bananas, watermelon, and grapes. I have scarves, and have collected material with fruit, I really like eating fruit, although I haven't eaten much of it in years until recently. My question is: What fruits do you like, and in what ways do you like to eat them? I enjoy a good banana. I really enjoy a good banana cut up with peanut butter on it. My dad recently made a strawberry and rhubarb mixture, and that has been like heaven to eat. Divine! I love baked apples. My favs are blackberries though. And if you make a smoothy with them, make sure you take out the seeds. :D Cough cough, otherwise it's a bit too much roughage. |

So when last I left all the tasty viewers, I was making lentils and rice. Surprise! I made it again today, only it was better. In fact, this is by far THE BEST THING I've EVER MADE!!!! So here's my new recipe! ( Continue here for the (chaotically written) recipe! ) |

One can of lentils ... the one i love best has been soaking with sweet onion and bay leaf. Ok, here's what I do... Heat up the lentils, adding olive oil. Allo's mama told me that adding oil to lentils when you cook them helps to reduce the gassy effect. While I'm doing that, I make up some rice. Then, I combine the lentils with the rice, add in more olive oil if needed, 1/4 cup of parmesan, can of mushroom pieces or fresh mushrooms sauteed with olive oil and onion flakes, salt and pepper, couple dashes of cumin, and i love this all purpose seasoning made by Simply Organic. It is so delicious. You could add in any veggies that you want. Sometimes I might add red pepper. Lentils and rice together is supposedly good for you. It can taste really awful if you don't put spices in it. So, I try to play up that angle and it's really filling and delicious. The parmesan will make it slightly creamy. |

Weird breakfast combo Take a medium sized baking dish, coat bottom and sides with oil. I use Spectrum Organic Canola Oil. Crack two eggs, empty contents into bowl. Use whisk or fork to scramble them up. Add milk if you have it. You could add cottage cheese and/or cheddar cheese. I add about a tablespoon of parmesan. Then I add a few dried onion flakes. I add one small can of mushrooms. You could use fresh ones. Sometimes I add sausage, depends on if I have any and if I'm in a meaty mood. I add a splash of Tobasco and the Mild Green Chile kind too. I think that's it. Bake it around 365 degrees F for at least 20 minutes, and then i stir a bit and adjust depending on how done it is. Sometimes I add a bit of rice flour or corn meal. But usually not. If I add the flour, I also add a bit of sugar. |

Well, I fell off the bandwagon of this, too. And I've been sitting here trying to think of what to write. Instead, I'll just say that I'm trying to get myself on a schedule, and that means writing in my journals and doing this each day. So, look for more to come here! For now, I leave you with my sandwich from earlier.
Ham and Cheese Sandwich 2 slices of rice pecan gluten-free bread 3 slices of deli ham 1 slice of cheese, in this case highly processed cheese because the deli was closed when I went shopping. Oh, and it's white cheese. cream cheese mustard if you like it Toast the bread first. On one slice, spread a thin layer of cream cheese. Put mustard on opposite slice of bread if you like mustard. I love mustard, all different varieties. Lately, my favorite has been basic yellow mustard that makes me think of the 4th of July. Place deli cheese on opposite slice of bread. Toasted bread will melt this slightly. Add ham. Put together. Eat. Add chips or carrots to the side. Have a frosty glass of water to accompany this. :) And then you'll eat lunch like me. |

Last night I made pork chops... Pork Chops Salt Tabasco - Red and Green varieties Cajun Seasoning Put the chops (like 6 of them) in a corning dish and added a shake of salt over them. Then put Tabasco on one side (red) and a thin sprinkling of cajun seasoning. Pre-heated the oven at 370, then baked them for about 25 minutes. Flipped em over, added a few drops of Green sauce to the other side and another thin sprinkling of cajun seasoning. Baked for around another 25 minutes. I usually cook em until they feel done... There is a certain firmness to meat when it is done. I probably should use my meat thermometer. Then you could serve with green beans and rice. I think it's the paprika that gives the pork a nice brown-red color. It was delicious!
